Fresh Veggie Sandwich

This is one of my favorite qucik and easy lunches! With a wide variety of flavor and endless opportunities! Add any of your favorite veggies to mix things up or keep it classic with this recipe!


1 avocado

1 tomato

Vegan cheeze

Vegan Mayo


Sprouts of any kind (my fav are Alfalfa and broccoli)

Chopped onion

2 slices of sour dough bread

Olive oil


  1. Start by heating up a medium sized pan with a drizzle of olive oil. Add the two slices of bread and allow to brown on each side.

  2. While the bread is cooking start chopping your veggies. Slice the avocado into thin pieces to allow it to fan out onto the sandwich.

  3. Once your bread is to your desired crispness transfer it to a plate. On one piece add hummus, onion and the avocado. To the other piece add mayo, cheeze, tomato and sprouts.

  4. (Optional) add salt, cumin, garlic powder, and paprika to both sides.

  5. Put the pieces together, cut in half and enjoy!
