Recipe makes 3 burritos
1 roasted sweet potato
1 tsp cumin
1 tsp salt
1 can of black beans
3 chipotle peppers in adobo sauce
Chipotle Mayo & verde salsa
Heat oven to 350°f, put sweet potato(es) on a baking sheet, roast for 45 min.
After cooling for a few minutes, remove skin (optional), add roasted potatoes to a mixing bowl, mash them.
Finely chop up chipotle peppers, add to a mixing bowl along with black beans and seasonings.
Mix everything together, add to a tortilla & top with chipotle Mayo. Roll up & serve with verde salsa.
